A template is designed to fit ten thousand businesses, which means it fits none of them well. You end up changing your business to suit the layout, hiding the thing that makes you different because there is no block for it.
The practical cost is speed. Page builders load their own framework, then their own styling, then a dozen plugins to fill the gaps they left. A site that could weigh 400KB arrives at four megabytes. On a phone, on mobile data, that is the difference between a customer and a bounce.
The other cost is ownership. When the builder company changes their pricing or drops a feature, your site changes with it. Ours does not, because there is nothing between your content and the browser.

03 How long it takes
A focused marketing site runs three to five weeks. A larger build with custom templates and integrations runs six to ten. E-commerce depends almost entirely on catalogue size and how clean the product data is.
